For the better part of two decades, I’ve worked hands-on in candy and confectionery production, spending more hours than I can count around sugar syrups, gelatin, and yes — marshmallows. I’ve watched batches turn out perfect, and I’ve watched plenty go wrong: sticky messes, marshmallows that wouldn’t set, ones that melted the second the weather changed.
That’s really why this site exists. Most marshmallow content online is written by people who’ve made a batch once or twice for a blog post. I’ve made them by the thousands, on a production line, where a mistake isn’t just annoying — it’s a wasted batch you have to explain. That’s a different kind of experience, and it’s the one I bring here.
